A quick treat and a lower fat way to have crunchy, shredded potatoes! It is a great alternative to hash browns and fun to eat! Add some great dips and enjoy!

- 3 large potatoes
- 1 Tablespoon chives chopped finely
- 1/2 teaspoon fresh thyme or savoury
- salt and pepper to taste
Ingredients

- Spray your waffle pan generously. Heat as directed.
- Wash but don't peel your potatoes. The peel is full of nutrition!
- Grate the potatoes. A food processor makes quick work of this process.
- Pat the shredded potato with a paper towel to dry off some of the excess moisture.
- Stir in the chopped herbs and salt and pepper to taste.
- Put approximately 1/2 cup of shredded potatoes on the hot waffle pan. Spread it evenly over the surface.
- Cook until potatoes are crisp and brown. Eat immediately or keep warm in the oven while you cook the rest. Be sure to respray the pan with oil between waffles to maintain the crispy factor. Enjoy!
Serve these as a savoury snack or a fun side dish. I served them with some homemade vegetable dip called Zippy Zacusca, which is a great way to get kids or adults to eat their veggies! Of course, these are great with a Flavour Explosion Dip, too!
