Ingredients
- 3-4 cups baby potatoes unpeeled for better nutritional value
- 1/2 cup flour
- 1/4 cup chopped green onion
- salt and pepper to taste

Instructions
- In a large pot of salted water, boil baby potatoes until soft. You should be able to easily put a fork through the potatoes.
- Mash potatoes, with their nutritious skins.
- Add flour enough to make a soft dough. Add chopped green onions and salt and pepper to taste.
- Shape your potato dough into thin pancakes and fry on an oiled pan until crispy and brown.
- Serve as a side dish, or add a salad and make it a meal. Enjoy!
