
This combination of flavours and textures is wonderful! It is such an easy, delicious, and nutritious meal for busy days. The Peanut Sauce is also great for using as a dip or as a drizzle on other oven-roasted veggies. This recipe makes lots for later!

- 2 medium sweet potatoes
- 1 cup chopped brocolli
- 1 cup natural smooth peanut butter unsalted
- 3 Tablespoons tamari or soy sauce
- 2 Tablespoons agave
- 2 cloves finely minced garlic
- 2 Tablespoons freshly squeezed lime or lemon juice
- 1 teaspoon freshly grated ginger (1/2 teas. powdered ginger works but fresh is best!)
- 1 teaspoon hot chile sauce or more to taste
- 1/2 teaspoon sesame oil optional but wonderful
- 1/2 cup water approximately

- For best results, make the sauce ahead of time so that all the wonderful flavours can meld. Simply whisk all ingredients together, adding water to thin sauce to desired sauciness. Adjust heat, sweetness, and saltiness to taste, but you probably won't need to! Enjoy licking the spoon!
- Wash and poke a few holes in your medium-sized sweet potatoes. Bake or microwave until tender. Using the microwave really speeds this recipe up.
- Wash and chop broccoli into florets. Steam or microwave until tender. Salt lightly, if desired.
- Split open each potato and fill with hot broccoli. Drizzle the sauce over generously. Have some extra sauce available! Optionally, sprinkle some sesame seeds on top. Enjoy!
You can freeze any leftover sauce for a versatile addition to so many meals. This tasty mixture will also keep in the fridge for a week.
