
A delightfully creamy,tasty alternative to the store-bought and it’s so easy! Made with a cashew creaminess, this versatile recipe is a start for so many delicious sauces!

- 1 cup cashews soaked overnight
- 1 Tablespoon fresh lemon juice
- 1 Tablespoon apple cider vinegar
- 1 teaspoon dijon mustard
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 + cup water
- 1/2 teaspoon agave optional

- Rinse and drain the soaked cashews. ( I always soak twice as many cashews as I need and freeze them after rinsing. It makes soaked cashew recipes more appealing!)
- In a high speed blender, combine all the ingredients and blend until the mayo is smooth and creamy. Adjust thickness by adding a little water, if you want a thinner dressing. Adjust flavour by adding salt and pepper to taste, or a little agave, if desired.
- This will keep in the fridge for at least a week. Try adding a variety of herbs or flavours to make wonderful flavoured mayos! My favorite is adding a little mustard/dijon and a little agave to make a sweet mustard/mayo sauce. Enjoy!
Try adding a spoonful of Smoky Jalapeno Sauce and a little water to some of this creamy mayo to make a lovely drizzle to pour over Sweet Potato Tacos or your favourite taco combination!
