
This quick-rise version of focaccia makes an easy, delicious and delightful kitchen creation!

Ingredients
- 3 1/2 cups unbleached flour It makes a great canvas! Spelt flour is good, too!
- 1 Tablespoon instant or quick-rise yeast
- 1 1/2 teaspoons salt
- 3 Tablespoons olive or avocado oil
- 1 Tablespoon agave
- 1 1/2 cup warm water
- finely chopped herbs - optional for flavour, but they will make your canvas spotty.

- Use the kneading attachment on your mixer. In your large mixing bowl, add flour, yeast and salt.
- Add the warm water along with the agave and oil.
- Knead the dough until it is comes together into a very soft, smooth dough. Add a little flour, if necessary.
- Using a little more oil, grease the bowl and turn the dough to oil all sides. Let the dough sit in a warm place for about 10 minutes.
- While the dough is resting, line a 9 x 13 pan with parchment paper and drizzle it with a few Tablespoons of oil.
- Gather any decorative veggies and/or garden plants that you think might work to decorate with. We used flowers, tomatoes, peppers, chives, spinach leaves, and herbs
- Now spread the dough to fit the pan. Make fingerprints in the dough and brush with more oil.
- Now create some bread art! Use lots of colour and shapes! Anything goes, as long as it's an edible flower or leaf, of course. Push the pieces gently into place. Brush all art work lightly with oil to prevent burning. You can sprinkle with a little flaked salt, if desired.
- Let rise for about an hour, until the dough is well puffed.
- While it is rising, heat oven to 375 degrees F. When it has risen, bake for approximately 30 minutes, or until nicely brown and crispy!
- Serve warm, dipping into a little balsamic vinegar and olive oil. Also great for serving with pasta or Caesar Salad, where you can soak up some extra sauciness!
