
Using delicious alternatives to the traditional toppings, create a quick, nutritious meal or snack anytime. Toss on the spicy Tofu Taco Crumble, lots of chopped fresh veggies and top with some Cheezy Chipotle Sauce. Don’t forget to have some of Erin’s Extra Green Guac and some Smoky Corn Garden Salsa on the side.

- 1/2 bag multigrain tortilla chips or make your own.
- 1/2 cup Tofu Taco Crumble
- 1 cup cherry tomatoes cut in half or chopped regular tomatoes
- 1/4 cup chopped green onion
- 1/4 cup thinly sliced fresh jalapeno
- 1 cup guacamole Try Erin's Extra Green Guac.
- 1/2 cup Cheezy Chipotle sauce or your own version of a cheezy sauce
- 1/4 cup sliced black olives optional
- salsa Try the Smoky Corn Garden Salsa. You'll like it.

- Prepare your Tofu Taco Crumble. ( Make this ahead of time and just warm up for easy meal prep.)
- Prepare your Cheezy Chipotle Sauce. (This can easily be made ahead of time and frozen for future use.Warm to serve.)
- Chop your tomatoes and green onion.
- Put chips on a big sharing plate. (Sometimes we warm these up a little, but it is not necessary.)
- Sprinkle over your warm Tofu Taco Crumble.
- Sprinkle your chopped veggies over the chips.
- Serve with dollops of Cheezy Chipotle Sauce and guacamole on top, or in side dishes for dipping. Serving the sauces on the side keeps the chips crisper.
- Offer a bowl of Smoky Corn Salsa alongside, and dinner is served. Enjoy!
