
These spiced, fruity, nutty muffins are great for breakfast, brunch, or snacking on any time. They also make your kitchen smell warm and delicious! Try using this easy Spiced Apple Pear Jam or sub applesauce or pear sauce.

- 1 1/2 cups all purpose flour
- 1/2 cup almond flour
- 1/2 cup brown sugar
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1/4 teaspoon ginger a little freshly grated ginger is great, too!
- 1/4 teaspoon salt
- 1/2 cup apple pear sauce or applesauce or cooked pear
- 1/2 cup almond milk or other plant-based milk
- 2 flax "eggs" 2 Tablespoons ground flaxseed in 6 Tablespoons warm water
- 1/4 cup vegetable oil
- 1 teaspoon real vanilla extract
- 1 cup pecans roasted and chopped, leaving 12 halves unchopped for decorating!
- 1/4 cup hemp seed toasted. Hemp seed is optional but it adds such great nutritional value!
- 1/4 cup coarse sugar
- 1 teaspoon cinnamon
- 12 toasted pecans

- Heat oven to 350 degrees F.
- To prepare: Toast 1 cup of whole pecans until brown and full-flavoured; it only takes a few minutes. Leave 12 pecans aside for muffins, chop the remainder.
- Toast hemp seed for 5 min, until light brown. Let cool.
- Lightly spray muffin tin with cooking spray.
- In a small bowl, mix 1 tsp cinnamon with 1/4 cup coarse sugar. Put aside.
- Mix 2 Tbsp flax seed with 6 Tablespoons of water and set aside to moisten for a few minutes.
- In a medium bowl, stir together dry ingredients.
- Add hemp seeds into dry ingredients.
- In a larger bowl, combine wet ingredients.
- Add moistened flax to wet ingredients.
- Add dry to wet and gently mix to combine. Do not overmix.
- Gently fold in the roasted, chopped pecans.
- Spoon evenly into greased muffin tins (3/4 full).
- Top each muffin with a toasted pecan and sprinkle with cinnamon sugar.
- Bake for approximately 20 minutes, watching for golden brown colour and firmness.
- Let cool in for a few moments in the pan and then remove carefully to finish cooling on a cooling rack.Enjoy!
Wonderful while warm, but they do stay moist! We love them with peanut butter as a great breakfast, or an evening snack! They also toast up very well! Enjoy!
