- 2 cups rolled oats If you need this to be gluten-free, make sure you have the correct type of oatmeal.
- 1/2 cup pecans raw
- 1/2 cup raw hazelnuts roughly chopped
- 1/2 cup coconut flaked or shredded
- 1/4 cup sesame seed
- 1/4 cup unroasted sunflower seeds
- 1/2 cup dried cranberries or "craisins"
- 1/2 cup organic raisins
- 1/3 cup pumpkin seeds
- 1/2 cup dried pineapple chopped
- 1 cup rice crispy cereal Use the brown rice krispies, as they are gluten-free.
- 1/2 cup melted refined coconut oil or vegan butter
- 1/2 cup maple syrup
- 1/4 cup agave
- 2 teaspoons vanilla extract
- 1 teaspoon salt
- 1/2 teaspoon finely grated orange rind optional but excellent
Ingredients

- Heat oven to 325 degrees F. and line a cookie sheet with parchment paper.
- Mix all the dry ingredients, all the seeds, nuts, fruits, and grains, in a large bowl.
- Combine the melted butter or oil, the maple syrup, agave, vanilla, and orange zest. Add this to your large bowl and stir to coat evenly.
- On a parchment-lined cookie sheet, press your mixture into a flat layer about 1/2 inch thick. This will help it become clumped.
- Bake at 325 degrees F. for about 15 minutes and then stir gently and press together again. Continue baking until an even golden brown, 10-15 more minutes.
- When baked, let it cool completely before removing from pan. It will continue to crisp up.
- Once cool, break into pieces and store in an airtight container. If it loses its crunch, just give it a few minutes in a 325 degree oven, watching closely so it doesn't burn. Let cool, and it will taste fresh again! Enjoy anytime!
Eat as is as a snack any time or enjoy it with some vegan yogurt and fresh fruit of choice! We like strawberry almond yogurt with slices of fresh banana! A great way to start your day!
