Banana Nice Cream!

It’s hard to believe how sweet and “creamy” smooth this is! I made this with a group of students and adults who were very surprised at how easy and delicious this was! It really is so simple, healthy, and fun to make and there are so many possible variations! Just start with ripe bananas and all that natural sweetness makes a flavourful, smooth, and healthy treat! Add your favourite frozen fruits and make your own combinations! We love adding frozen pineapple, strawberries, raspberries, or mangoes! Add a scoop of fruity goodness to top a cake, like the Lemon-Lime Poppyseed Cake, or just eat it straight! Satisfy those cravings and nourish your body at the same time!

This is the basic process and we have added a little orange juice and lime zest to create a citrus-y complimentary topping for our cake. Enjoy the options!

Instructions
  1. Peel and freeze your bananas. (see note below)
  2. Break up the frozen bananas into chunks and put them in your blender or food processor.
  3. Add the orange juice and lime zest.
  4. Whirl until smooth and serve right away or store in an airtight container in the freezer. If you like it to be a little firmer, just let it stay in the freezer for 30 minutes before serving. Enjoy!
Recipe Notes

Try to make sure that your bananas are frozen with as little air around them as possible. We use a Food Saver machine that sucks the air away from the food. It is incredible how much better the bananas stay. We don't get any of the brown, slimy freezer bananas that we have had in the past. It is great to have a few frozen for this or for making a quick batch of Banana Chocolate Chip Mindful Muffins!
