- 1 cup unbleached flour
- 1 teaspoon cinnamon
- 1/4 teaspoon allspice
- 1/4 teaspoon cloves
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1/2 cup vegan butter
- 2 Tablespoons almond or any plant milk
- 1 1/2 teaspoons vanilla
- 1 cup dried cranberries or "craisins"
- 3/4 cup rolled oats
- 1/2 teaspoon finely grated orange rind
- 1/2 cup coarse white sugar

- Heat oven to 350 degrees F. and line your pans with parchment paper.
- In a bowl, sift together the flour, spices, salt, and baking soda.
- In your large mixing bowl, cream together the butter and the sugars until fluffy.
- Add your milk and vanilla to the butter mixture and blend.
- Now add your sifted dry ingredients and mix to combine.
- Lastly, add the oatmeal and craisins with a quick final mix.
- At this point, you can chill the dough for a few minutes or go ahead and shape them. Roll the dough in 1 inch balls and place on parchment, leaving room to spread. With the bottom of a glass, flatten each cookie a little to create an even look.
- Before baking, make the orange sprinkle by crushing your orange rind into the coarse sugar with your fingers to create an orange-coloured sprinkle! So simple but wonderful! Sprinkle generously on your cookies and then bake for about 10 minutes. At this point, they should look soft in the middle, if you are looking for a good chewiness! Cook longer for a crispier cookie.
- Remove from trays and let cool, or just eat them warm! Enjoy!
These keep well and freeze excellently. If you want want to crisp up the edges after they have been frozen, just put the thawed cookies bake in a 350 degree oven for a couple of minutes and they taste like fresh! Great for unexpected guests or cookie cravings!
