Apple Pecan Scones
This veganized family scone recipe is so versatile! Using applesauce means you can use less butter and also keeps the scones moist! They are wonderful served warm and they also toast up nicely later, if there are any left over!

Instructions
  1. Preheat oven to 400 degrees F. and line a cookie tray with parchment paper.
  2. Stir together dry ingredients until combined.
  3. Cut in your vegan butter until crumbly.
  4. Toss in your finely chopped pecans and your chopped, spiced apple pieces.
  5. In a separate bowl, stir together your milk, applesauce and vanilla.
  6. Make a well in your dry ingredients and add your wet ingredients.
  7. Mix gently by hand just until flour is combined. Knead two or three times gently to make a soft dough. The less you mix this, the better your final product.
  8. Put you dough on a lightly floured sheet of parchment paper and divide the dough into two. With each half, make a circle of approximately 6 inches in diameter. Divide each circle into 6 even triangles.
  9. Put your scones onto your lined cookie sheet and bake for approximately 12-15 minutes, or until well-browned.
  10. While scones are cooking, mix your icing sugar and maple sugar to make a pourable glaze. Adjust sugar as required.
  11. When scones are finished baking, let cool for a minute or two and then drizzle, while the scones are still warm, with the maple glaze. Sprinkle with the chopped pecans and then some more maple drizzle!
  12. These are best when eaten warm! Enjoy!!
