Treat this marinated carrot recipe as you would any hot dog, serving it up in a fresh bun and adding all your favourite toppings. We like the basics, mustard and tomatoes (or ketchup), but some purple coleslaw or fried onions would also be great!

Instructions
  1. Heat a large pot of salted water to boiling. Wash and cut carrots to the length of the buns that you are using. Try to create a carrot with an even diameter from end to end, so that it has the shape of a hot dog and will have an evenly cooked texture. Boil until carrots are fork-tender.
  2. Combine all marinade ingredients in a bowl and whisk to combine.
  3. Let the cooked carrots sit in marinade for about 4-6 hours.
  4. When ready to eat, cook your "dogs" on a grill or on a frying pan to give them a little char for extra flavour. Enjoy one of these on a fresh bun with your favourite toppings!

We served these up with some oven-baked baby potatoes! Enjoy trying something new!
