Easy Ricotta Swirls
A surprisingly simple and elegant way to create a delicious meal, these Easy Ricotta Swirls have an herbed almond ricotta wrapped in a crispy phyllo shell. A roasted veggie dip or a vegan tzatziki goes well with this!

Instructions
  1. Heat oven to 350 degrees F.
  2. Butter a pie pan.
  3. Carefully unfold a sheet of phyllo and brush lightly with butter. Spread a thin rope of ricotta, approximately1/2 inch diameter, along the long edge. Sprinkle with chopped basil and/or oregano.
  4. Roll up the ricotta inside the phyllo into a long snake. Curl it into a swirl and place in pie pan. Repeat, making 2-3 more swirls.
  5. Brush all the swirls with more melted butter. Sprinkle with Everything Bagel Sice or sesame seeds.
  6. Bake for approximately 30 minutes or until golden brown and crispy.
  7. Serve with a Roasty Veggie Dip or some vegan tzatziki. I would add a green salad on the side!
Roasty Veggie Dip
  1. Just throw all your veggies onto a cooking sheet with a little oil and roast at 375 degrees F. until soft and roasty.
  2. When cooked, throw the veggies, the fresh basil and a little salt and pepper into a food processor and process a little until desired texture is reached. Leave it a little chunky! Add salt and pepper to taste.
  3. Serve as a dip for these Almond Ricotta Swirls, with perogies, or with smashed potatoes! Enjoy!
