Instructions
Fluffy Apple Pancakes
  1. Combine plant milk and apple cider vinegar in a cup and let sit for a few minutes. This creates a "buttermilk.
  2. Combine the flax seed with the water and let sit until egg-like consistency.
  3. Sift together the dry ingredients.
  4. In a mixing bowl, combine the melted butter, applesauce, vanilla, milk mixture and flax seed "egg".
  5. Add the dry ingredients and stir just until combined. It can be a little lumpy.
  6. Let sit for a few moments to allow for fluffiness! While it sits, preheat a non-stick pan and lightly spray with oil.
  7. If you have rings to use, these make for a lovely, thick pancake. Lightly spray or wipe the rings with oil. Make Crumble Topping and set aside
  8. Once batter has had a few minutes to sit, scoop about 1/4 cup of batter into each greased ring and cook at a medium-low temperature to ensure that the batter cooks through. When bubbles have risen and broken on the top and it starts to look a little dry on top around the sides, gently lift the edge to see if it is a golden brown. If it is ready to flip, sprinkle a little of the crumble mixture onto the raw side of the pancake and then flip and continue cooking until the other side is brown and the pancake is cooked through.
  9. If you are making regular pancakes, just scoop the batter on to the pan and let cook as above. Do not spread it out if you want a fluffy pancake.
Crumble Topping
  1. Combine topping ingredients in a small bowl to create a crumble.
Chunky Applesauce Topping
  1. Chop apples into bite-sized pieces and cook in a small pot with the sugar and cinnamon, stirring until apples are tender and evenly coated with the syrup.
  2. Spoon warm over pancakes! Enjoy!
